If I have models? A bit of Martha Stewart for business, Nadine de Rothschild for good manners, Gwyneth Paltrow for adventure and Iris Afpfel for eccentricity...
For 20 years, I was hidden behind the great chefs I accompanied , and I decided to come out of the woods now to share with sincerity, humor and convictions, all my years of encounters, friendships, travels, cuisines and wonders.

Quickly anyway… Between 2000 and 2006, I worked for Alain Ducasse (20 Michelin stars) on, in particular, its international development . Then, in 2007, I joined forces with Yannick Alléno (now 11 stars) to co-found and then lead the group that supported our restaurants around the world. I also directed YAM, the magazine for chefs, from 2011 to 2021.

BUT, IN REAL LIFE, WHAT DOES IT MEAN?
A pochard is a small duck with a red head and flamboyant plumage, a diver, whose species is threatened with extinction.
In fact, any resemblance to a luminous human, of the Venetian blond type, who rushes headlong, fights tooth and nail to safeguard French know-how and whose name would possibly refer to a web-footed aquatic bird whose flesh is edible, is purely coincidental!
