Should the water for tea be boiled?
Do not heat your water in the microwave
We don't expect it to bubble in the classic electric kettle either.
And no, it doesn't change 'nothing' if we wait for the water to cool after it has boiled
But why?
🌱 Because tea usually denatures after 70/75° (green teas) or 90° (black teas, wulong teas and pu-erh teas) depending on the vintage. Each tea requires its ideal temperature.
🥀 Boiled water has lost its oxygen, which plays an essential role in the development of aromas at the time of infusion.
So, either use a tea kettle with an adjustable thermostat, or invest in a small kitchen thermometer to dip into your saucepan.
