When and what to decant?

🍇 Above all, don't decant an old wine at the risk of distorting it

🍇 Not pinots noir or Burgundy wines overall (without being an expert).

But then, what do we do?

🍷 We mainly decant young and/or natural red wines that need time to express themselves or soften their tannins (about 2h/4h) And for old vintages , we just decant them by removing the cork well before dinner.
