Once and for all, how to turn an artichoke?

Third episode of our “Once and for all” program with Yoric Tièche, chef of the Grand-Hôtel du Cap-Ferrat.

Very clearly this episode is more technical but it's been so long that I wanted to know how to turn an artichoke to be able to cook it.

When I see them in a bouquet, these artichokes pepper the summer on the shelves, I find them so pretty. Now, thanks to Yoric, I know how to work them!!
